Origin of Vanilla Planifolia Fruit Extract

The species of the genus Vanilla are evergreen climbers. Bourbon vanilla, the main commercial variety in Europe, comes mainly from Reunion, but also from Madagascar, the Comoros and the Seychelles. The fruits are harvested as soon as they begin to turn yellow. The brown-black color and the characteristic aroma only develop during a fermentation process.
